"Marinated Seasonal Fish Salad with Fennel and Celery Root, Smoked Yogurt Sauce" focuses on the delicate flavor of seasonal fish, while also emphasizing the aroma and texture of fennel and celery root. Furthermore, the mellow smoky aroma of smoked yogurt and the refreshing taste of dill oil are layered on top, creating an autumnal appetizer that harmonizes and highlights the individual characteristics of each ingredient.

"Grilled Tilefish with Saikyo Miso Sauce" features tilefish with crispy, fragrant scales and tender, flaky flesh. The sauce, based on Saikyo miso, has a gentle sweetness and richness that enhances the elegant flavor of the tilefish. This dish combines aroma and delicacy, incorporating Japan's fermentation culture.
