Eel and Kaga bancha bean paste

 

 

"Eel and Kaga Bocha Bean Paste" features eel that has been grilled to a fluffy and fragrant perfection while removing excess fat, concentrating its delicious flavor.

By layering it with Kaga bancha tea paste, the soft roasted aroma and subtle bitterness enhance the sweetness of the eel.

The cucumber marinated in a sweet and sour sauce served with the eel adds a light acidity that balances the overall flavor.

In our "Seared Bonito with Ravigote Sauce," the bonito is seared over straw to infuse the surface with a smoky aroma, while the inside remains moist, bringing out its full flavor. It's paired with melt-in-your-mouth grilled eggplant and a sauce infused with chopped aromatic vegetables, adding a refreshing acidity and light texture. The smoky aroma, umami, sweetness, and acidity harmonize perfectly, creating a dish that evokes the feeling of summer.
