Grilled Matsusaka beef, kinome miso grilled spring vegetables
透明感のあるアオリ烏賊の甘味に、みずみずしい筍を重ね、繊細なカルパッチョに仕立てた「アオリ烏賊と筍のカルパッチョ キャビアを添えて」。穏やかな酸味のヴィネグレットが素材の輪郭を引き立て、キャビアの塩味と余韻が春を感じさせる前菜です。
The main dish is "Grilled Matsusaka Beef with Kinome Miso and Spring Vegetables," which is grilled Matsusaka beef coated in kinome miso, which has the aroma of young leaves. The spring vegetables are gently braised and then grilled to perfection. The mountain aroma and the robust meat blend together to create a delicious dish that is truly springtime.
