Bigfin reef squid and bamboo shoot carpaccio with caviar
Grilled Matsusaka beef, kinome miso grilled spring vegetables
The "Aori Squid and Bamboo Shoot Carpaccio with Caviar" is a delicate carpaccio made by layering the sweetness of the transparent bigfin reef squid with fresh bamboo shoots. The mildly acidic vinaigrette brings out the flavor of the ingredients, while the salty and lingering taste of the caviar creates a spring-like appetizer.
The main dish is "Grilled Matsusaka Beef with Kinome Miso and Spring Vegetables," which is grilled Matsusaka beef coated in kinome miso, which has the aroma of young leaves. The spring vegetables are gently braised and then grilled to perfection. The mountain aroma and the robust meat blend together to create a delicious dish that is truly springtime.
